Since the very first day we opened in 2002, every table has had a small jar of our house sauce. It arrives on its own, without anyone asking. And from that moment, it stays with you throughout the meal.

The recipe is simple — tamari, rice vinegar, water and a touch of sweetness — but when you taste it, you sense there's something special. It's deep without being overpowering. It has a gentle tang that keeps things fresh. And thanks to the water, it's surprisingly light — it never weighs you down.

When you order our steamed dumplings or gyozas for delivery, they come with this same sauce. We want the flavour of Out of China to arrive at your home exactly as it is at our table.

The wonderful thing is that this dressing goes far beyond Chinese food. Try it with a salad, cold pasta, grilled vegetables. A few drops and any simple dish becomes something special. It's light, tangy, with just enough sweetness — it enhances flavour without masking it.

The recipe:

3 parts gluten-free tamari

1 part gluten-free rice vinegar

3 parts water

Sweetener to taste

Mix, store in a jar, and use it on everything. For those with coeliac disease: make sure both your tamari and rice vinegar are labelled gluten-free. The flavour is practically identical to the conventional version — we say that with complete confidence, because we've been making it exactly the same way for over 20 years.
